    Is there anything more refreshing than biting into a juicy slice of watermelon on a hot day? This simple but oh-so-satisfying watermelon with lime and mint is my go-to when I need a quick, cooling snack that's bursting with flavor. The sweet watermelon, tangy lime, and fresh mint are a match made in summer heaven. Plus, it's ridiculously easy to throw together, so you can spend more time soaking up the sun and less time in the kitchen.

    With just three simple ingredients-watermelon, lime, and mint-you'll have a refreshing treat ready in no time.

    • Watermelon - Watermelon is not only incredibly refreshing but also composed of about 92% water, making it one of the most hydrating foods available. This high water content helps keep you hydrated, which is crucial during hot summer months. Additionally, watermelon is a good source of L-citrulline, an amino acid that contributes to the production of L-arginine. L-arginine plays a key role in synthesizing nitric oxide (NO), which helps dilate blood vessels and improve blood flow. Increased intake of L-citrulline from watermelon can potentially enhance cardiovascular health by boosting nitric oxide production, all while providing a delicious and hydrating treat.
    • Mint - In addition to its cooling and aromatic flavor, mint offers a nutritional boost with its high content of vitamins A and C, as well as antioxidants. These properties make it a healthful addition to the recipe, enhancing both the taste and the nutritional profile of your watermelon salad.

    Tip for washing herbs: To wash fresh herbs, place them in a colander and rinse gently under cool running water. Swish them around lightly to remove any dirt or debris, then shake off excess water. For quicker drying, use the spinner function of a salad spinner to gently dry the herbs without bruising the delicate leaves, or pat them dry with a clean kitchen towel or paper towel.

    • Mint - you can use other varieties of mint, such as spearmint or peppermint, depending on your taste preference. Just keep in mind that different mints can vary in intensity.
    • Lime juice - If you prefer or only have bottled lime juice on hand, you can use it as a substitute. On average, one lime yields about 2 tablespoons (1 ounce) of juice. However, this can vary slightly depending on the size and ripeness of the lime. However, I highly recommend using fresh limes for the best flavor and vibrant taste. Fresh lime juice adds a more authentic and tangy kick to the salad that's hard to match with bottled varieties.

    • Cucumber - Adds a refreshing, crisp crunch that complements the juicy watermelon.
    • Avocado - Brings a rich, creamy texture that balances the lightness of the salad.
    • Vegan feta - Introduces a savory, salty note that contrasts beautifully with the sweetness of the watermelon. You can make a tofu feta at home, and my go-to vegan feta options are Violife and Trader Joe's.
    • Red onion - Adds a zesty kick and a touch of sharpness for a more complex flavor.
    • Basil - Another summer herb that blends seamlessly with the watermelon, lime, and mint, enhancing the overall freshness.

    Equipment

    You'll need a cutting board and a large chef's knife for this recipe. You can squeeze the limes by hand, but a handheld citrus juicer makes the job easier and ensures you get the most juice. My juicer gets a workout on a weekly basis-it's a kitchen essential for me!

    Storage

    Store in an airtight container in the fridge. It will stay fresh for up to 4-5 days.

    When selecting a watermelon, look for one that's symmetrical and free of dents or major irregularities. A good watermelon should feel heavy for its size, indicating it's full of water and juicy. Check for a uniform shape and a creamy yellow spot on its underside, which indicates it was ripe when picked. Additionally, give it a gentle tap-if it sounds hollow, it's likely ripe and ready to enjoy!

    When is watermelon in season?

    Watermelon is typically in season during the warmer months, from late spring through early fall.  In the US, watermelon is generally in season from June through September. During these months, you'll find the freshest and most flavorful watermelons, with peak season usually falling in July and August.

    Should you wash a watermelon?

    Yes, you should wash a watermelon before cutting it. Even though you don't eat the rind, washing it helps remove any dirt, bacteria, or residues that could transfer to the flesh when you cut into it. Rinse it under cool running water and scrub the surface with a clean brush to ensure it's thoroughly clean.

    Can I make this recipe ahead of time?

    Yes, you can prepare this watermelon with lime and mint salad ahead of time. Just be sure to store it in an airtight container in the fridge. It's best enjoyed within 4-5 days.

    • 8-10 cups watermelon, this is usually ½ of a medium or 1 person sized watermelon.
    • 2 limes, juiced
    • ½ cup mint, chopped or diced, depending on your preference-finely chopped for a more subtle infusion or roughly chopped for a bolder mint flavor in each bite.
    • Few pinches Tajín seasoning, Optional
