Watermelon with lime and mint

A refreshing and vibrant salad made with juicy watermelon, tangy lime, and fragrant mint. This simple recipe combines the sweet and hydrating qualities of watermelon with the zesty brightness of lime and the cool aroma of mint. Perfect as a light snack or a cooling side dish, this salad is easy to prepare and ideal for summer.

Ingredients
  

  • 8-10 cups watermelon, this is usually ½ of a medium or 1 person sized watermelon.
  • 2 limes, juiced
  • ½ cup mint, chopped or diced, depending on your preference—finely chopped for a more subtle infusion or roughly chopped for a bolder mint flavor in each bite.
  • Few pinches Tajín seasoning, Optional

Instructions
 

  • Cut the Watermelon: Start by cutting the watermelon into bite-sized cubes or chunks and place them in a large mixing bowl.
  • Add Lime and Mint: Squeeze fresh lime juice over the watermelon, then sprinkle in the chopped mint leaves.
  • Combine and Serve: Gently toss everything together until well combined. Serve immediately or chill in the fridge for a refreshing, cool treat. Enjoy!
    Optional: Sprinkle on some Tajìn seasoning for a zesty kick and a touch of spice.

Notes

Lime juice: If you prefer or only have bottled lime juice on hand, you can use it as a substitute. On average, one lime yields about 2 tablespoons (1 ounce) of juice. However, this can vary slightly depending on the size and ripeness of the lime. However, I highly recommend using fresh limes for the best flavor and vibrant taste. Fresh lime juice adds a more authentic and tangy kick to the salad that’s hard to match with bottled varieties.
