- Rolled oats: The oats are the anchor of this dish and contribute to the texture and heartiness, they also are a good source of fiber.
- Ripe bananas: Ripe bananas will have brown spots on them and the riper the banana, the sweeter the flavor. So, the darker the banana, the better for this recipe! I often use my bananas that have turned completely black for this dish.
- Frozen mixed berries: Frozen berries are flavorful, convenient, and depending on the time of year they can be much more cost-effective!
- Unsweetened soy milk (or other plant-based milk of choice)

Variations and Substitutions
- Make it gluten-free by using gluten-free rolled oats. Do not use steel-cut oats or quick-cooking (instant) oats for this recipe.
- Flaxseeds: You can swap chia seeds in place of the ground flaxseed.
- Frozen berries work great for this recipe however you can certainly use fresh berries instead.
- Plant-based milk: You can choose any plant-based milk for this recipe.
Instructions
*Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius)
Mash ripe bananas with a fork in baking dish
Add plant-based milk to baking dish
Add in the rolled oats, cocoa powder, baking powder, ground flax, cinnamon, salt and optional vanilla extract
Stir with fork until cocoa powder is well mixed in
Stir in ~¾ of the frozen mixed berries
Top with the rest of the frozen berries. Place into oven at 350 F (177 degrees C) and bake for 35 minutes

- For a softer, gooey oatmeal, serve immediately after baking. Otherwise, let oatmeal cool completely, then slice into squares. Reheats well in the microwave or enjoy cold.
