Chocolate Banana Baked Oatmeal with Berries

- 2 ripe bananas
- 2 cups plant-based milk (I use unsweetened soy milk)
- 2 ½ (225 g) cups rolled oats
- ¼ (60ml) cup maple syrup
- 2 tablespoons ground flaxseeds
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 3 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract (Optional)
- 2 cups frozen mixed berries
Preheat oven to 350 degrees Fahrenheit (177 degrees Celsius)
Mash ripe bananas with a fork in the the baking dish
Add plant-based milk to baking dish and mix with the mashed banana
Add rolled oats, maple syrup, ground flaxseeds, baking powder, salt, unsweetened cocoa powder & optional vanilla extract to the baking dish and stir until the cocoa powder is well mixed with the oats and plant-based milk mixture
Add ~¾ of the frozen berries and stir into the oat mixture
Spread the rest of the frozen berries across the top of the oat mixture
Place into oven at 350 Fahrenheit (177 degrees Celsius) and bake for 35 minutes
For a softer, gooey oatmeal, serve immediately after baking. Otherwise, let oatmeal cool completely, then slice into squares. Reheats well in the microwave or enjoy cold.
Servings: 4-8 servings
Do not use steel-cut oats or quick-cooking (instant) oats for this recipe.
